From Aroma Nativo, founded by Luis Marcelino in Acevedo — once a red zone, now Colombia’s specialty coffee paradise. Through his Veci Project, Luis shares his fermentation lab in Pitalito with small farmers who grow exceptional cherries but lack the means to process them.
The ripest Pink Bourbon drupes underwent controlled anaerobic fermentation, where pulped, then re-fermented in mucilage in barrels with native bacteria and special yeasts. After 10 days of raised-bed sun drying, the parchment rested 2 months in temperature-controlled stabilization. Every lot stays separate — never blended.
